Risk assessment and traceability in food industry safety

The goal of the project was to improve risk management in the food chain by developing risk assessment methods and creating tools for risk management. The project resulted practical methods for risk evaluation at the end of the food chain (retail, consumer), information for risk assessments and for focusing risk management on the distribution from the factory to the consumer. A risk profile was provided for the norovirus, and traceability methods that are used in the industry were evaluated.
